Cebuanos love their pungko-pungko, a basketful of fried delights that include offal, sausages, springrolls, and dried seafood, all paired with puso (hanging rice) and dipped in coconut vinegar infused with onions and chilies.

One of the most popular and accessible places is the row of pungko-pungko tables and low benches — perfect for a scrunch (pungko) — in the Redemptorist Church area. But it’s the addictive ginabot (in Tagalog, chicharon bulaklak, fried pork “mesentery” dipped in flour) that has made this pungko-pungko place famous.
