BARIKATA RAMEN BAR. The signage out front declares “Super Hard” Tonkotsu and the staff translates the brand to Bari, very, and Kata, hard. While that actually refers to a harder type of noodle keeping relatively al dente for longer periods, we’d argue that it could also be a reference to hardcore goodness in the savory broth thickened only by the rendering of pork bones for days. Literally liquefied bone makes a milky solid base for the rest of the classic ramen accoutrements, including red chili and their best-selling roasted garlic ramen.
