Best Restaurant Special 2017: Beetroot and Goat Cheese Salad at The Pig & Palm

Jason Atherton’s vision of a modern tapas-style restaurant using local produce is expertly interpreted by head chef Karl Emsen into a variety of delights. The classic flavor pairing of beetroot and goat cheese may not be entirely new, but here it is executed to perfection in the salad. The mellow sweet and earthy flavor of the beetroot is balanced by the savory- sweetness, slight acidity, and creamy texture of the pureed goat cheese to have induced unanimous oohs among our set. Rarely would there be an item we would come across that is so good and exciting that the panel would create an entirely new category for it.
