The freshest fish makes for the best soup dishes, and no other place makes larang, short for linarang, like the sidewalk cooks in Pasil do. But there’s a catch: you have to be there really early — yes, at 3 a.m. — to get your larang fill. That’s because this is the time when all the fresh seafood gets unloaded from the nearby wharf straight to the fish market, some of which end up in wood-fired woks and turned into that semi-thick soup seasoned with green mangoes, tomatoes, and black beans, then served steaming hot in the cool darkness before dawn.
