SABEL’S POCHEROHAN. This Pochero from Sabel’s is made in the tradition of homemade Cebuano goodness.

The beef shank is simmered for hours in a huge pot over a coal-fired brick stove. There are the expected ingredients, such as ginger, cabbage, dabong (bamboo shoots), corn cobs, scallions, eached timed perfectly when mixed to the entire dish.

Everything comes together when served piping hot, the clear broth — not oily — delicious.
