Fat is flavor and that in theirs melts onto and bubbles through the skin to give it an almost chicharon-like quality, leaving the underlying meat less fatty but nonetheless moist. The render somehow seals in the juices in the meat for a burst of meaty flavor justifying their tagline “extra crispy, extra sarap.” With that, Tatang’s reminds us why it once took the title of Best Lechon Belly and retakes it with a vengeance this year.
